It seems to me every pim should provide for export of a plain text version of a topic (to use the myinfo3 term) to a cv file. And to import such a file. Then if the user decides to change pims, he will only lose formatting, and won't have to copy it document per document.

I believe this feature is already there (at least in MyInfo 3):

File->Export

and choose "Classic .HEAD". This is a text format that is very generic, search the web for more information about this format.

Regarding the "classic .HEAD" format, a web search does not confirm that this is a generic format. In fact it rather looks to me like a format specific to More and maybe a few other products. My offhand guess is that anoher Mac outliner, Acta, is the other, but this is pure speculation.

Whether export to a cv file is the way to go is more controversial than I realized. It is said that the trend favors XML as the universal format.

Well MyInfo 3 has plug-in capability anyway, which means someone can write an export to XML plug-in once the SDK is released.
